Macaroni and Cheese

Cook 3/4 lb of macaroni until done.
Drain and add back to the pot.

"Cheese" sauce:
In a high speed blender* add:
1 3/4 c water
1/2 c raw oats
1/3c nutritional yeast
2 Tbsp tapioca flour
2 Tbsp lemon juice
1 tsp white miso paste
2 tsp tomato paste
1 tsp salt
1/2 of a small onion
1tbsp Dijon mustard
1/4 tsp ground turmeric

Blend everything until hot. Check after a few minutes to see if it is starting to thicken, blend longer if needed.  Don't over blend it, it will thicken a bit as it cools.

Topping:
1C GF bread crumbs
1tsp garlic powder
1tsp onion powder
1 Tbsp Italian seasoning
salt and pepper

Mix all together to combine.

When the cheese sauce is done, pour it over the macaroni and stir until it's coated.  You could just eat it like that, but I like the crunchy topping so....

Pour into a 9x9" pan, sprinkle topping over it and pop it under the broiler for a few minutes to brown.

((I also sprinkled some Daiya shreds on before adding the topping, more for looks than anything else))

*If you don't have to have a high speed blender (like a Vitamix).  You can blend this in a regular blender until it's all combined. Once it's blended, pour it into a saucepan and cook over med high heat stirring constantly until it begins to thicken. It won't take long!
